Good Ole Chicken Pot Pie

Old recipes never die,they just get revised. The original recipe had you making your own pie crust and chicken broth and you certainly can, but I just buy them. This is good for a family meal or you can dress it up for company by putting in individual baking dishes. Cut the bake time to about 30 minutes if you do. A great comfort food during the cold winter months.

Serves 6:

Ingredients:

24 ounces chicken broth
2 cups new potatoes, diced
1 cup carrots, diced
3/4 cup onion, diced
1/2 cup frozen peas
2 cups cooked chicken, about 2 breasts, diced
1/4 cup flour
1/2 teaspoon salt
1 teaspoon poultry seasoning
1 teaspoon freshly ground black pepper
1/2 cup skim milk
1 pie shell, I use ready-made

Directions:

Bring broth to boil. Add potatoes, carrots, and onion. Cook until vegetables are tender. Add peas.

Add chicken to vegetables

Combine flour, salt,poultry seasoning,pepper, and milk.Gradually add to chicken mixture.

Cook 2-3 minutes to thicken sauce.

Put into greased 13 X 9 baking dish and bake at 350 degrees 55 minutes. Let rest 10 minutes before serving.
