I made these for the first time 08/30/2015. My son found the recipe on Facebook and told me he’d make dinner if I made the cookies. He’s a great cook so I agreed to make the cookies. They are delicious. Crisp on the outside and chewy on the inside with just a faint taste of the bourbon. Just like when you are cooking with wine, use a bourbon that you like to drink. To make all the cookies a uniform size, I use an ice cream scoop to put them on the cookie sheet for baking. I also use parchment paper on my cookie sheets for easy cleanup and it prevents the cookies from sticking.

Ingredients:

1/2 cup unsalted butter, at room temperature
2 tablespoons granulated sugar
2 tablespoons turbinado or coconut sugar
3/4 cup plus 2 tablespoons packed dark brown sugar
1 egg, at room temperature
1/4 cup Kentucky bourbon
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
7 ounces bittersweet chocolate, cut into roughly 1/2-inch chunks with a serrated knife
3/4 cup walnut pieces
1 sprinkle flake sea salt, for finishing

Directions:

Preheat the oven to 360 degrees. Line a baking sheet with parchment paper or a silpat liner.
In the bowl of stand mixer, cream together the butter and sugars until well-combined. Add the egg and bourbon. Mix well to combine.
In a medium bowl, stir together the flour, baking soda, and salt.
Add this to the sugar mixture and mix to combine.
Stir in the chocolate and walnuts.
Scoop the dough onto the baking sheet and sprinkle cookies with a pinch of flake sea salt.
Bake 10-12 minutes
Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
