Who doesn’t like a good lima bean ? Well I guess there are a few and you could certainly substitute another bean like a butter bean or green bean. Really, any bean you like. This is a great summer salad for picnics because there is no mayo. Those of you new to zesting, make sure you zest the lime before juicing it. To get more juice out of the lime, microwave 15-30 seconds before cutting open. Fresh parsley is a must for this dish. It is easy to double this for a crowd and so easy to make.
1 pound frozen lima beans
1 cup red onion, finely chopped
2 cups tomatoes, chopped
1 cup fresh parsley, chopped
1/4 cup green olives, chopped
1/2 teaspoon dried oregano
1/2 cup olive oil
1/4 cup fresh lime juice, about 2 limes
1 teaspoon lime zest
2 cloves garlic, minced
Cook beans according to package directions. Drain and let cool.
Combine, onion, tomatoes, parsley, olives,oregano, oil, lime juice, lime zest, & garlic in a bowl.
Stir to mix. Add cooled lima beans.
Fold in feta cheese.
Let sit in refrigerator 1 to 2 hours. Stir and serve
