I’m always looking for simple appetizers. This one is easy and fills the bill when you have your “meat and potatoes lovers” friends over. During the holidays we do appetizer parties and this is a good one to have on hand. The other great thing is that you can serve it room temperature so you can make it ahead of time. Just keep the dill sauce in the refrigerator until you’re ready to eat. The light mayo cuts some calories but you don’t lose the flavor. I never met a potato I didn’t like so this recipe makes me very happy.
16 red potatoes, halved
1 tablespoon dill
1 teaspoon caraway seed
salt & pepper, to taste
16 slices bacon, halved
1/4 cup mayonnaise, Dukes, light
1/4 cup butter milk
Steam potatoes in a steamer basket until tender 15-18 minutes or cook in microwave for 4 minutes; let cool
Heat oven to 425. Line a rimmed baking sheet with foil.
Wrap each potato with bacon and place seam side down on baking sheet, Bake until bacon is crisp, 18-20 minutes
Meanwhile, in a medium bowl, whisk together the mayonnaise, buttermilk, dill weed , caraway seeds, salt and pepper. Let this sit in the refrigerator at least an hour so the flavors marry.
Serve sauce with potatoes.
